You guys, fall is in full swing. Sweaters, boots, all things pumpkin, hot apple cider and S-O-U-P! Does anyone else get excited about having a giant bowl of hot, nourishing soup for dinner? In the fall and winter months, I make a big pot of soup at least once a week for dinner and enjoy the leftovers for lunch throughout the week too. This soup is perfect for a busy weeknight, but it would also be a delicious addition to your game day spread. We enjoyed it with cheese quesadillas…because soup’s always more fun with something to dip in it 😉

To Make Slow Cooker Spicy Pork Soup:
Cut a 2 lb. Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet into bite size pieces. Put the pork in a 5-6 quart slow cooker. Add diced tomatoes & green chilies, Great Northern beans, chicken broth, tomato sauce, tomato paste, ground cumin, salt and pepper. Stir well and cook on low for about 6 hours. So simple and so flavorful!
- 1.5-2 lb. SMITHFIELD MARINATED ROASTED GARLIC & HERB PORK LOIN FILET
- 2 10 oz. cans DICED TOMATOES & GREEN CHILIES*
- 2 15 oz. cans GREAT NORTHERN BEANS, drained
- 6 cups CHICKEN BROTH
- 8 oz. can TOMATO SAUCE
- 6 oz. can TOMATO PASTE
- 1 teaspoon GROUND CUMIN
- 1 teaspoon SALT
- ½ teaspoon GROUND BLACK PEPPER
- Cut pork loin into bite sized pieces. Place in 5-6 quart slow cooker.
- Add remaining ingredients, stir well.
- Cook on low for 6 hours.
- Serve with topped with shredded cheese and cheese quesadillas on the side.
