Ever get stuck in a dinner rut eating the same exact things on rotation? Me too. Sometimes life is just super busy and there’s no time to be creative in the kitchen, other times it’s easier (and I’m all about easier) to make the same thing than to reinvent a family favorite. My family loves all things BBQ…ribs, pulled pork, brisket…anything and everything. My husband’s must have drink to accompany his BBQ platter – iced tea, every single time. The other day I decided to take pulled pork and add it to totchos (tots + nachos = totchos). Layer on your must have nacho toppings and you’re ready for a fresh take on dinner to share with family or friends.
This is a super simple weeknight dinner that puts leftover pulled pork to work in a fresh, new way. Come to think of it, this meal would be perfect for a game day gathering 😉 You can set the toppings on the side and people can add their own toppings as they please. Buy it in a gallon jug or a 12 pack of bottles to have on hand for a cool, refreshing drink that will complement any meal.
Making Pulled Pork Totchos is really simple, we’re going to start by baking up frozen tator tots according to the package instructions. While they’re baking, warm up the pulled pork —> this recipe is a great way to use leftover pulled pork that you made in the slow cooker or maybe grabbed from the store or your favorite BBQ joint. After the tots are ready, season as desired and sprinkle with shredded cheese and then layer on the pulled pork. Pop it back in the oven for about 5 minutes to melt the cheese. Top with your favorite nacho toppings. I love this type of sheet pan dinner because the kids can top theirs the way they like and the grown-ups can add a bit of heat to their liking. Serve right away with a glass of Lipton Peach Flavored Iced Tea.
Pulled Pork Totchos
Ingredients
- 1 pkg. FROZEN TATOR TOTS
- PULLED PORK made in the slow cooker or store bought
- SHREDDED CHEESE
- YOUR FAVORITE NACHO TOPPINGS: sour cream* guacamole, chopped tomatoes, chopped cilantro, jalapeno slices
Instructions

Bake tots according to package instructions. Meanwhile, gently warm pulled pork and shred into bite size pieces.

Season tots upon removing from the oven. Sprinkle with shredded cheese. Layer on pulled pork. (You can add another layer of cheese if you'd like.) Put back in the oven for 5 minutes to melt the cheese.

Top with your favorite nacho toppings and serve immediately with a glass of Lipton Peach Iced Tea.

*This recipe is easily adapted to accommodate any size crowd.
* We made spicy sour cream to drizzle over the totchos. Stir together sour cream and hot sauce, add a little water to thin if needed.
