Baked Oatmeal…it’s what’s for breakfast. A warm, cinnamon-y bowl of comfort, what’s not to love?
I have always counted on a good, satisfying breakfast to get my day off on the right foot. I’ve realized more so lately that a breakfast that I don’t have to actually make every day makes my life easier. Enter baked oatmeal…bake up a pan that will feed a handful of people for one meal or a hungry mother of 4 {who doesn’t want to have another decision to make} for several mornings. It is seriously so simple to throw together and, honestly, a steamy bowl of oatmeal is how I make it through these awfully grey winter mornings.
Here’s what I love about this particular version…it has a lot of moisture thanks to the applesauce, some baked oatmeal recipes tend to get a little dry. It’s simple to make, stir together a few pantry staples and bake! After you put this in a bowl, the options are endless as to what flavor combo you can dream up. I love it really simple with sliced bananas and a heavy splash of half & half. But it’s also lovely with fresh berries, peaches or diced pears.

Baked Oatmeal

Yield 4 servings
Ingredients
2 cups OLD FASHIONED OATMEAL
1/3 cup BROWN SUGAR
1 teaspoon BAKING POWDER
1 teaspoon CINNAMON
1/2 teaspoon KOSHER SALT
2 Tablespoons BUTTER, melted and cooled slightly
1 1/2 cups MILK
1/2 cup UNSWEETENED APPLESAUCE
1 teaspoon VANILLA EXTRACT
1 EGG, beaten
Instructions
Preheat oven to 350 degrees. Lightly grease a 2 quart baking dish.
In a large bowl, combine oatmeal, brown sugar, baking powder, cinnamon and salt.
Add melted butter, milk, applesauce, vanilla extract and beaten egg. Stir well.
Transfer to prepared baking dish and bake for 30-35 minutes until center is set.
Serve warm with fresh fruit and a splash of half and half.
