A chocolate lover's delight! This recipe for One Bowl Chocolate Cupcakes is incredible and perfect for birthdays or any holiday!

Ingredients
Cupcakes:
1¾ cups FLOUR
1 cup BROWN SUGAR
¼ cup UNSWEETENED COCOA POWDER, sifted
1 teaspoon BAKING POWDER
1 teaspoon BAKING SODA
½ teaspoon SALT
1 cup MILK
1 EGG
⅓ cup VEGETABLE OIL
2 teaspoons VANILLA EXTRACT
1 cup MINI SEMI-SWEET CHOCOLATE CHIPS
Frosting:
½ cup BUTTER, room temperature
⅓ cup UNSWEETENED COCOA POWDER
2½ cups POWDERED SUGAR
2 Tablespoons MILK
2 teaspoons VANILLA EXTRACT
Instructions
To make the cupcakes:
Preheat oven to 350 degrees. Prepare a 12 count muffin tin with cupcake liners.
In a mixing bowl, stir together flour, brown sugar, cocoa powder, baking powder, baking soda and salt.
Measure 1 cup of milk in a 2 cup measuring cup, measure in ⅓ cup oil and add egg and vanilla. Whisk to combine and add to dry ingredients.
Stir everything together until incorporated and fold in chocolate chips.
Distribute batter evenly among cupcake liners, I used a standard ice cream scoop to do this. They will be pretty full.
Bake 20-23 minutes or until a toothpick tests clean, be careful not to over bake.
Frost cooled cupcakes as desired.
To make the frosting:
Beat butter until smooth. Sift in cocoa powder and continue beating until combined. Add in half the powdered sugar, 1 Tablespoon of milk, remaining powder sugar and remaining milk with the vanilla. Beat on high speed until fluffy. Pipe onto cooled cupcakes. Add sprinkles soon after frosting if desired, this frosting firms up quickly.
