Cinnamon Dutch Baby with Maple Berries
 
 
This easy oven pancake topped with maple berries is the perfect simple breakfast!
Ingredients
  • For the dutch baby:
  • 4 Tablespoons BUTTER, melted + 2 Tablespoons BUTTER for the pan
  • 3 EGGS
  • ¾ cup FLOUR
  • ¾ cup MILK
  • ½ teaspoon CINNAMON
  • For the berries:
  • 1 Tablespoon BUTTER
  • 2 Tablespoons PURE MAPLE SYRUP
  • 2 teaspoons VANILLA EXTRACT
  • 1½ cup STRAWBERRIES, chopped
  • 1 cup FRESH or FROZEN BLUEBERRIES
Instructions
  1. Preheat oven to 425 degrees. While the oven is heating, put 2 Tablespoons of butter in a cast iron skillet and place in the oven to melt.
  2. In a medium bowl, whisk together 4 Tablespoons melted butter, eggs, flour, milk and cinnamon. Whisk briskly for about a minute.
  3. Remove the skillet from the oven and rotate the pan to coat it with the melted butter. Pour in the batter and bake for 20-22 minutes until puffed and golden.
  4. Place butter, maple syrup, vanilla and berries in a small saucepan. Heat over medium-low heat until combined and saucy.
  5. Cut dutch baby into wedges and serve topped with maple berries.
