Veggie Confetti Chili
- 1 Tablespoon OLIVE OIL
- 1 cup CHOPPED ONION
- 1 RED BELL PEPPER, cored and chopped
- 1 teaspoon MINCED GARLIC
- 1 (15 oz) can PINTO BEANS, drained
- 1 (15 oz) can BLACK BEANS, drained
- 1 (15 oz) can KIDNEY BEANS, drained
- 2 cups FROZEN CORN
- 1 (14.5 oz) can FIRE ROASTED DICED TOMATOES
- 1 (15 oz) can TOMATO SAUCE
- 1 cup SALSA VERDE
- 2 Tablespoons CHILI POWDER
- 2 teaspoons GROUND CUMIN
- Heat oil over medium high heat. Add onion and bell pepper and cook about 4 minutes stirring occasionally. Add garlic and cook another 2 minutes.
- Stir in remaining ingredients and simmer for about 20 minutes.
- Serve with your favorite chili toppings.
